Dish 001 · Tasting Menu Course IV
Scallop & Aged Vinegar
A hand-dived Orkney scallop, seared over binchotan charcoal, rested on a pool of our 18-month Chinkiang reduction. Three drops of cold-pressed scallion oil. No more.
The provocation of the dish is its refusal to explain itself. The vinegar is the punctuation. The char is the memory.

The methods behind the dishes
Technique I
Wok Hei
Literally "breath of the wok." A flame at 400°C, a pan that has been used for ten thousand services, and a window of under forty seconds in which everything either becomes or doesn't. Wok hei cannot be replicated at home. It is the reason the restaurant exists.
Technique II
The Fermentation Lab
Beneath the restaurant, 34 ceramic jars hold pastes, vinegars, and bean sauces at various stages of life. The youngest is six weeks. The oldest has been here since 2020. We do not rush the jars. They arrive at the table when they are ready, not before.
Dish 002 · Tableside Service
Lacquered Peking Duck
Ordered 24 hours in advance. Hung for 48 hours. Lacquered seven times over two days with our house maltose blend. The skin is the point — translucent, glass-like, the texture of something very expensive and very earned.
Served tableside by our kitchen team. The first carve at the table. Thin pancakes, spring onion, and cucumber served at room temperature. Nothing cold. Nothing rushed.
